Staff Spotlight: Miguel Rosa

Excellent cuisine is such an important part of a truly 5-star experience. As such, we work with chefs who have incredible knowledge of their craft and are prepared to go the extra mile to ensure guests eat food that surpasses their expectations. One such valued team member is Executive Chef, Miguel Rosa, who is passionate about the job at hand and an expert when it comes to the 5-star food world.

  1. What is your name and job title? 

My name is Miguel Rosa and I am the Executive Chef on Resort.

  1. Take us through an average day. 

My day starts at 5am, when I enjoy a walk along Kite Beach for around two hours every morning. After breakfast, I start work supervising the first service for guests, then it’s time to accept the ingredients from our suppliers and manage the menu for the rest of the day. I have several meetings to organise and confirm the menus, then we get to work on the lunch service and at around 3:30pm all the kitchen staff sit down to have a meal together. After we have all eaten, it’s time to manage the weekly requests and begin preparing the dinner ready for when the restaurants open again.

  1. How long have you worked at the Resort? 

It has been 3 years now since I started working at the Resort.

  1. What did you do before you worked at the Resort?

Mainly doing the same thing but I previously worked at another Resort in Spain.

  1. What do you love most about your job?

I love a challenge so it would have to be managing the huge volume of meals we have to create every single day, the big team we have here on Resort and the beautiful places we get to serve the food.

  1. What has been your proudest moment so far?

Each hotel opening has its own special place in my memory and every achievement or award we have received has been a great moment for me and the staff.

  1. What kind of thing do customers ask you to help with?

Often they ask me for help with their different culinary likes and dislikes, allergies or food preferences – all of which we are more than happy to do.

  1. What is the one thing you think people should always bring to Cape Verde?

Dreams because with an open mind you will have the chance to relax and be free to the different experiences of the Island.

  1. How has The Resort Group helped the Island?

The Resort Group has helped bring tourism, which has provided work to a great number of people, both local and foreign, and has helped with the development of the Island.

  1. What would you like to say people who are thinking of coming to Cape Verde?

Obviously, that they will have a great culinary offering! But also, that there are beautiful places to visit, with very good hotels and things to do.
